Final Fantasy VII's story is fleshed out more as this is a prequel, so you learn more about Sephiroth's creation and you get the benefit of a good translation as opposed to FF7's butchered translation in 97.
Possibly the best FF? The most hyped? Final Fantasy 7 is certainly one of the more mainstream RPGs ever and changed the genre.
